Making time for dinner
I’m still trying to figure out how on earth to fit cooking into my new schedule as a mommy. I spend pretty much all of Annabelles waking hours playing with her and when she’s asleep I try to sneak in a workout or clean up the house as much as possible, or vacuum the dog hair off the carpets.
I’ve tried cooking in large batches and then freezing individual portions and although that does work really well I don’t have time to do it very often. Annabelle is not content sitting in her bouncer or playing with her toys by herself for more than about 15 minutes at a time. So I have to give something up during naptime to get cooking done.
I’m trying to get Annabelle used to going back to daycare so starting 3 weeks before going back to work she’s been going 2 times a week for about 3 hours. One of those days we had a dinner playdate at our house so I cooked! I made my favorite turkey meatloaf, actually I made 4 of them so I could freeze 3 of them. Meatloaf is such a great comfort food and usually not the healthiest dish but I found such a great recipe from the South Beach Diet with no breadcrumbs. It has white beans and mushrooms in it and it does not dry out! It’s great for anyone on a low carb or gluten free diet or if you just want a healthier meatloaf. I hope you love it as much as I do, and remember to make extra to freeze!
