Simply Delicious Kale Salad
Kale is one of the best greens around. Full of vitamins, antioxidants and even calcium it is usually my go-to. There are so many delicious ways to prepare kale, from oven-roasted chips, to braised or as a salad mix in. Raw, massaged kale however is one of my favorite ways to enjoy it – just make sure you keep raw kale to no more than once a week if you have thyroid trouble since it is a goitrogenic food which means too much raw kale can potentially interfere with a healthy. Also keep in mind that kale is a heavily sprayed crop – it is chock full of toxic pesticides so stay away from it if it’s not organic, that means avoid ordering kale at a restaurant just because it has a healthy reputation unless you know it’s organic.
Not quite sure how to prepare kale? No problem- here is one of my favorite recipes that takes practically no time to make:
Massaged Raw Kale Salad
1 bunch kale
1/4 red onion finely chopped
½ cup cherry tomatoes
Juice of ½ lemon
1 clove garlic finely chopped
A handful of crushed almonds
** If you want to make this a heartier salad try adding some more delicious ingredients to it. A few great options are grilled chicken, wild caught salmon, sardines, shrimp, bulgur wheat pearled barley or whatever else sounds delicious to you. I’d love to hear back from you about your favorite add-ins please!
- Remove the kale from the stems and tear into bite sized pieces.
- Pour the lemon juice over the kale and massage it into the kale until it’s nice and tender.
- Cut the cherry tomatoes in half, the avocados into cubes and finely cut the onion and garlic.
