Delicious Breakfast (or snack) Cookie!
The breakfast cookie is far and away one of the easiest things to make and my favorite part about it is that it never has to be boring. All you have to do is change the ingredients and you have a whole new cookie. I call it the breakfast cookie but sometimes I make it as a very special treat by adding Dandies mini marshmallows and chocolate chip. Even with the treat add ins it’s still healthier than a traditional cookie and who doesn’t want that?
They also freeze well so go ahead and make a big batch. You can grab one or two out of the freezer in the morning to put in your purse and by the time you’re ready to eat them they’ll be defrosted!
Cookie base:
- 1 cup oatmeal (I like to pulse it in the food processor to break down the oats)
- 1 very ripe banana
- 1/4 tsp. vanilla extract
- 1 spoonful organic peanut butter
- cinnamon
Mash the banana and mix all the ingredients together- you want the mixture to be pliable but not too mushy or dry. You can add a little nut milk if you need more moisture or some more oatmeal to dry it up some more.
Add ins:
As I mentioned you can play around with the add ins. Hemp and ground flax seeds are easy to hide from even the pickiest eaters since you can’t even see them.
So far my favorite combination is:
- hemp seeds
- flax seeds
- crushed pecans
- crushed walnuts
- pumpkin seeds
Once everything is mixed together form into cookies, place on a cookie sheet greased with coconut oil or lined with parchment paper and cook on 350 degrees for about 15 minutes.
