Eat your Yolks

One of the easiest steps to take towards eating real food is giving up the egg white omelet or any variation of it. Why even eat an egg without the yolk? The egg white doesn’t have much going for it flavor wise or nutrition wise. The taste is in the fat. Contrary to popular belief egg yolks won’t cause heart disease; they are actually good for your heart.

Along with liver, eggs have a high concentration of biotin which helps hair and skin stay healthy. Lecithin is another oh so important nutrient found in the yolk.  Every cell in the human body contains lecithin and helps the body digest fat and cholesterol. Antioxidants which are known cancer fighters and oxidation preventers are also found in the yolk. Pastured eggs even contain Omega 3 fats from all the grass, insects and worms that the chickens eat when they are free to roam. Pastured eggs are also higher in monounsaturated fats, vitamins A, E, folic acid and beta-carotene than their cooped up  counterparts.

Organic, pastured eggs are the best choice because of all the added health benefits that come from omnivorous chickens. Chickens are not meant to be vegetarian, they’re not meant to eat other ground up animals either so labeling can be a bit baffling. If you can’t find organic, pastured chickens, organic, non caged chickens fed omega 3’s will produce the next best egg.

Stay away from factory farmed chickens, and do yourself a favor by not putting egg like products in your body, they’re not natural and have no business being in the body. These include powdered eggs, liquid eggs, pasteurized eggs and egg substitutes. Have a real egg. Fried in some organic, pastured butter. Yum.

Eggs are a great, cheap source of protein. Much to my husband’s dismay they are a staple in my house. I love having them in case of a dinner emergency and they make a great breakfast or high protein snack. They even last a long time, not that eggs in my house go bad; we eat them up too fast for that. Just in case, they last in the fridge for about a month! What other fresh protein can you keep in the fridge for a month? None that can be turned into a quick meal, which is why I love eggs. The older they are the easier they are to peel. So don’t curse your hardboiled egg that’s falling apart on you, feel better knowing that at least it’s still fresh.
