Decadent Chocolate Pudding (made with avocado!!)
I’m a chocoholic. Annabelle will do anything for some good guacamole (especially from Chipotle). Put our two loves together and you’ve got Avocado Chocolate Pudding. Sound disgusting? I promise it’s actually delicious, even Andrew approved. You probably won’t believe me until you try it though. I found a recipe for chocolate frosting using avocado when I was trying to figure out what to do for Annabelle’s first birthday cake. Sadly I never saved the link but when I tried to find it again I found this recipe and since I can’t follow a recipe to save my life I made some changes.
This recipe is a keeper, you’ll never look at avocados the same way again.
2 small, ripe avocados, 5 tbsp raw cacao, 5 tbsp agave, 2 tsp. vanilla, 2 tbsp. cold water (or more or less, depending on how thick you want your pudding).
Put everything except the water into a food processor and give it a whirl. Add a little bit of water at a time as needed to help it puree.
Chill for about an hour, serve and enjoy!
If you can keep it out of your belly long enough you can save it for a day or two. Avocados don’t go bad after a day, they just turn brown and since your chocolate pudding is already brown you don’t have to worry about that.
Avocados made the Clean 15 this year so don’t worry about buying organic =)
FYI. If you make guacamole (or just cut up some avocado)and want to keep it an extra day make sure to keep the seed and store the avocado with the seed. This prevents is from browning. How? I don’t know, it’s just a little tidbit I picked up somewhere along the journey of my life.
