Pumpkin Treats
Yes, I’m aware that it’s not fall and that pumpkin isn’t really an intuitive choice at this time of year. What can I say, I like pumpkin, it’s healthy, it’s tasty, it’s versatile and it’s a great way to sneak some extra vitamins into my family’s snacks. It’s not a spring food but I’m ok with that, especially nowadays that the food that gets thrown on the floor is outweighing what actually makes it into Annabelle’s belly.
I’m always looking for good snacks and I’m especially fond of those that double well as breakfast foods and even more so those that you can make double or triple batches of for freezing. These are 2 of my most recent obsessions that the whole family loves and that I can feel good about packing in a lunchbox. They even make a good accompaniment to yogurt for a quick and healthy breakfast. And they’re actually quick to prepare and quick cleanup, that’s always a huge plus!
Pumpkin Pie Cake: great as a healthy birthday cake alternative or cut into squares for breakfast or a snack. It’s made with whole wheat flour and a minimal amount of agave and honey.
Pumpkin Protein Brownies: I love these as an afternoon snack filled with healthy fats and protein. This one is completely, grain free, gluten free, paleo friendly.
