Protein Packed Crispy Rice Treats
There’s just something about home made Rice Krispies Treats – ooey gooey marshmallow yumminess. They might not be the healthiest but they’re fun to play with, super easy for kids to make and delicious to eat. Unless you’re my eight year and won’t go near them!
I must admit that nowadays I’m not a big fan of the ingredients so I’m glad that Annabelle doesn’t like them. Instead we make a healthier version that also doubles as a fun kids activity and I think is even more delicious. You can still throw in some all natural food color (here’s why you want to stay away from traditional food dye) shape these like little pumpkins or goblins and sneak some protein into those tiny bellies before they go out for an evening of trick or treating.
Ingredients:
2 cups puffed rice cereal
½ cup almond or sunflower seed butter
¾ cup brown rice syrup
½ cup finely chopped nuts, seeds or raisins
¼ cup mini chocolate chips (or organic candy corn and other fun treats!)
Directions:
Combine the almond butter and rice syrup in a sauce pan and cook on very low heatfor about 3 minutes until it’s nice and creamy.
In a large bowl toss the rice cereal and mix ins.
Pour the warm creamy mixture over the cereal mix and make sure everything is evenly coated.
Press the mixture into a 9X9 baking pan and cool in the refrigerator.
Once it’s set you can use cookie cutters to cut your favorite shapes or shape into pumpkins!
If you want to go crazy with decorating but want to keep food dyes and corn syrup out of your creations look for Surf Sweet gummy candies or Unreal candy for some fun decorating!
