Paleo Golden Beet Fritters

I try very hard to get Annabelle to eat her veggies. One of the easiest ways is in the form of a pancake. Pancakes made with sprouted or whole wheat seem to work pretty well, her current favorite is the ‘green pancake’ which is really just a sprouted wheat pancake mix with pureed fresh spinach in it. They are easy to make in enormous batches and keep in the freezer.

This weekend I got a little more creative. I’ve made red beet pancakes before which we all enjoyed but this time I went for a golden beet paleo fritter. Made with coconut flour and fried in coconut oil. If you don’t like the taste of coconut you can stop reading, I didn’t even attempt to feed these to Andrew since he will quickly sniff out coconut.  If you don’t like beets this wouldn’t be a good recipe for you either since the flavor is in no way hidden as it is in a wheat pancake.

Ingredients:

2 cups roasted beets ( I used golden)                                                                                      
2 tbsp. coconut flour                                                                                                                   
2 eggs                                                                                                                                         
1/2 tsp. salt                                                                                                                           
coconut oil for frying

Steps:

1. Puree the beets in a food processor or blender                                                                 
2. Put the beets in a bowl and add eggs, coconut flour and salt                                   
3.Heat coconut oil in a pan and fry a few small fritters at a time                                       
4. Make sure you wait until they begin to form well before flipping or they will fall apart on you.

I happen to love beets and I think these would be great under some runny poached eggs. Or freeze them and pop them into the toaster when you’re running short on time but want a substantial breakfast.
